[Recipe] Ricotta Cheese Pancake



Ingredients
Ricotta cheese 130 g
Flour 1/2 cup
Eggs (separated) 2
Sugar 2 Tsp
Milk 90 ml
Baking powder 1/2 Tsp
Salt pinch


Directions
1) Lightly mix ricotta cheese, milk, and egg yolks in a bowl.
2) Sift the flour, baking powder and salt together, then mix it into the ricotta cheese mixture. (Make sure you don't over mix)
3) In a different bowl, whip the egg whites until soft peaks form.
4) Fold in half the whipped egg whites into the cheese and flour mixture. 
5) Fold in the rest of the egg whites, ensuring that you don't mix too much.
6) In a heated pan or skillet (heated to medium heat), spoon in the mixture. Flip once bubbles begin to form on the surface and the other side begins to lightly brown. After flipping, once the other side is lightly browned, you're done!


Ricotta cheese pancakes are very fluffy and most of all delicious!
They taste great with a butter/honey mixture.
