[Recipe] Banana Bread/Cake

I'm not a big fan of raw bananas, nor am I particularly fond of banana bread...

BUT
that all changed (well the latter changed) when I had the best banana bread/cake so far.

This recipe was given to me by an acquaintance, and all I can say is, it's so moist and fluffy, and most of all delicious! (And so simple to make)


Ingredients
Butter 100 g
Sugar 150 g
Egg 2
Flour 200 g
Salt 1/2 Tsp
Baking Powder 2 Tsp
Baking Soda 1 Tsp
Banana 2 (make sure they are nice and ripe!)
Lemon juice 1 Tbsp
Vanilla Extract 1 Tsp (Optional, for flavor)


Prep Work
1. Preheat oven to 375 degrees F
2. Leave butter and egg at room temperature.
3. Sift flour, salt, baking powder, and baking soda together about 3 times.
4. Peel the banana and mush it up in a bowl. Add lemon juice.
5. Preheat oven to 375 degrees F
6. Line the cake/loaf pan with parchment paper.


Directions
1. Whip butter until soft and creamy.
2. Gradually add in sugar until the butter mixture is light and fluffy.
3. Add 1 egg to the mixture. (Lightly beating the egg in a separate bowl before adding is a good tip.)
4. Add second egg in and this time mix well, approximately 2 minutes. If you have vanilla extract, add it in as well.
5. Add 1/3 of the flour mixture in by hand. Fold it in.
6. Add 1/2 of the banana paste. (Make sure you are not "mixing" but rather folding it in, adding in lots of air)
7. Next add in half of the remaining flour mixture. 
8. Add in rest of the banana paste.
9. Finally, add the last of the flour mixture.
10. Once everything is blended well, pour into the pan. Drop the pan from a height of about 10 cm 2 to 3 times to allow the trapped air to escape.
11. Bake for 30 to 40 minute or until lightly browned. (If you have an oven window, make sure you keep checking around the 30 minute mark, depending on the oven, it bakes faster! 
12. Stick a toothpick in the cake to check to see if it has baked all the way through. When  you stick the toothpick in and if the toothpick comes out clean, then it's good. If the batter is stuck on it, then you need to cook it a bit more.


These are so light and fluffy, and soo moist, once you take a bite you won't be able to stop!


You can also make muffins with this batter. 
I only had medium sized muffin cups but my muffin pans were larger, so I didn't get the nice muffin tops, but instead they look like mini cakes. But since they have baking powder and soda, they rise quite a bit, as you can tell from the picture.
